Taste of Thailand: Pad Thai
Ingredients:
- 8 oz (225g) rice noodles
- 2 tablespoons vegetable oil
- 1 cup firm tofu, cubed
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 1 cup bean sprouts
- 1 cup shrimp, cooked and peeled (optional)
- 1/2 cup roasted peanuts, chopped
- 2 green onions, sliced
- 1 lime, cut into wedges
Sauce:
- 3 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon tamarind paste
- 1 tablespoon sugar
- 1/2 teaspoon chili powder (adjust to taste)
Instructions:
- Step 1: Cook rice noodles according to package instructions. Drain and set aside.
- Step 2: In a wok or large pan, heat vegetable oil over medium heat. Add cubed tofu and cook until golden brown.
- Step 3: Push tofu to one side of the pan and add minced garlic to the other side. Cook until fragrant.
- Step 4: Push tofu and garlic to the side, pour beaten eggs into the pan, and scramble until cooked.
- Step 5: Add cooked shrimp (if using), bean sprouts, and cooked rice noodles to the pan. Toss to combine.
- Step 6: In a small bowl, whisk together fish sauce, soy sauce, tamarind paste, sugar, and chili powder to make the sauce.
- Step 7: Pour the sauce over the noodles and toss until everything is well coated and heated through.
- Step 8: Serve Pad Thai topped with chopped peanuts, sliced green onions, and lime wedges on the side.
