Ingredients:
- 1.5 pounds (700g) boneless, skinless chicken thighs, cut into chunks
- 2 large onions, finely chopped
- 3 tomatoes, pureed
- 1/2 cup plain yogurt
- 4 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 teaspoons garam masala
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/4 cup vegetable oil
- Fresh cilantro for garnish
- Salt to taste
Instructions:
- Step 1: In a large skillet, heat vegetable oil over medium heat. Add chopped onions and cook until golden brown.
- Step 2: Add minced garlic and grated ginger to the onions. Cook for 2 minutes until fragrant.
- Step 3: Add chicken chunks to the skillet and brown on all sides.
- Step 4: Stir in garam masala, ground turmeric, ground cumin, ground coriander, and cayenne pepper. Cook for 2 minutes.
- Step 5: Pour in pureed tomatoes and cook until the oil begins to separate from the tomato mixture.
- Step 6: Whisk yogurt in a bowl and gradually add it to the skillet, stirring constantly to avoid curdling.
- Step 7: Season with salt and let the curry simmer until the chicken is fully cooked and the sauce has thickened.
- Step 8: Garnish with fresh cilantro before serving.
