Ingredients:

  • 1.5 pounds (680g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 3 tablespoons tikka masala spice blend

  • 1 tablespoon ground coriander
  • 1 tablespoon smoked paprika

  • 1 large onion, finely chopped
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup heavy cream

  • Cooked basmati rice for serving

Instructions:

  1. Step 1: In a bowl, combine yogurt, tikka masala spice blend, turmeric, cumin, coriander, paprika, ginger, garlic, salt, and pepper. Add chicken pieces, coat evenly, and marinate for at least 1 hour or overnight.
  2. Step 2: In a large skillet, heat vegetable oil over medium-high heat. Add chopped onion and sauté until golden brown.
  3. Step 3: Add marinated chicken to the skillet and cook until browned on all sides.
  4. Step 4: Pour in crushed tomatoes and simmer for 15-20 minutes, stirring occasionally.
